Pilsner-Style Lager Beer
Brewed with water from our wells along with 83% local ingredients
Mashed with local two-row pilsner malt from our friends at Carolina Malt House of Cleveland, North Carolina along with a touch of dextrin malt for mouthfeel and ice cream cone-like foam stability. Moderately hopped with the choicest saaz and tettnang for a bright floral aroma. Fermented cool with our preferred lager yeast strain for a decidedly dry, crisp and snappy finish. Delicately dry-hopped in the fermenter with saaz to capture the alluring jasmine flower aromatics we have come to love and expect from the very best pilsners. Conditioned cold for 4 additional weeks prior to fermentation for a total production time of 6 weeks.
Paying homage to the history of the farmhouse pastures we now call home, Nebo Pilsner helps to immortalize Whippoorwill Farm. As a working dairy farm in the early 1900’s, they, as many dairies did, turned to crafting and selling ice cream as a monetary necessity and very important value-added product. The illustration on this can reflects on those early Nebo dairy-blazers while simultaneously referencing how we as brewers, prefer to have our pilsners poured. See can for instructions.
Arguably the most difficult style to execute, with a pilsner, there is absolutely nothing to hide behind. We’ve spent our collective brewing careers tinkering and toiling over our interpretation of a pilsner and we couldn’t be more proud of the results.
